Bring in a salad

When I don’t have time for anything fancy, here are a few recipes I keep coming back to…

  • Grilled/Sauteed Asparagus Spears 

  • Spring Salad mix with Fava Beans (boiled) and Vinaigrette dressing

  • Spring Salad mix sprinkled with olive oil, chopped strawberries, goat cheese and (cooked and cubed chicken breast, optional)

  • Baked Brussel Sprouts (sprinkle with olive oil, salt and pepper)

  • Spring Salad mix with peeled halves of Navel Oranges, goat cheese and sliced pecans.

  • Sauteed Broccoli 

  • Cherry tomatoes mixed with chopped cucumber, grated carrots and olives, to this you can add 1 tsp of green chutney(optional)

  • Salad mix with sauteed and cooled mushrooms, shredded cheese and some raisins (optional)

  • Celery (thinly sliced, take out the excess strings), dates (chopped), parmesan cheese, olive oil and salt
