Bring in a salad
When I don’t have time for anything fancy, here are a few recipes I keep coming back to…
Grilled/Sauteed Asparagus Spears
Spring Salad mix with Fava Beans (boiled) and Vinaigrette dressing
Spring Salad mix sprinkled with olive oil, chopped strawberries, goat cheese and (cooked and cubed chicken breast, optional)
Baked Brussel Sprouts (sprinkle with olive oil, salt and pepper)
Spring Salad mix with peeled halves of Navel Oranges, goat cheese and sliced pecans.
Sauteed Broccoli
Cherry tomatoes mixed with chopped cucumber, grated carrots and olives, to this you can add 1 tsp of green chutney(optional)
Salad mix with sauteed and cooled mushrooms, shredded cheese and some raisins (optional)
Celery (thinly sliced, take out the excess strings), dates (chopped), parmesan cheese, olive oil and salt
